In a pot, add chicken broth and cooked noodles (keep noodles separate and add to individual bowls if you don't plan to eat all the soup in one sitting). Boil the carrots and celery in water until just tender. Once cooled, finely shred the chicken using two forks or your hands. Add the chicken to the broth leftover in the pressure cooker, seasoning with extra salt and pepper if desired.

- Sauté onions on med heat until soft, add carrots and celery and continue cooking for another 10 minutes on med heat.
- Add water, chicken broth and pasta and bring to a soft boil on high heat until pasta is cooked.
- While waiting for pasta to cook, remove chicken meat from bones and chop up. Be sure to double check the meat for any small bones.
- When pasta is perfect, turn off the heat and add the chicken and pepper. Adjust salt if needed….chicken broth has salt in it, you may need a tiny bit more.
- Place in bowls and sprinkle with dry or fresh parsley.
