- The night before you intend to cook the steaks, or at least 4 hours before, brush steaks with olive oil and apply salt and pepper to both sides. Let sit uncovered in the fridge.
- An hour before you intend to grill pull them out and set on the counter to come to room temperature.
- Preheat grill. If charcoal, when the coals are white hot, if gas… cook on high.
- If at least 1 inch thick, and for medium rare, cook 5 minutes per side. Only flip once.
- Remove from grill and let rest covered in foil for at least 10 minutes.
- Serve and enjoy.
