  6. Pre-heat oven for 350°F….Next is to place the zucchini pan, place them close together it doesn't tip over. Place meat in zucchini carefully
  7. After 35 minutes are finished check w/ knife the inside of the zucchini to make sure it's soft.

Saute onion in oil in large heavy skillet. Bake the vegetarian stuffed zucchini until it is slightly soft, and the quinoa mixture is browned on top. While the quinoa stuffed zucchini is in the oven, prepare the puree. Heat olive oil in a saucepan over the stove. Caramelize the onions in the oil, stirring it frequently so as not to burn.
