Add onion, garlic, carrots, celery, worcestershire, and herbs and spices. Whisk together beef stock, mushroom soup and skimmed milk until smooth. Return the beef to the frying pan together with any juices on the plate, add the mushrooms and pour the stock mixture over the beef and mushrooms. Sprinkle beef with salt and pepper.

Return the beef to the frying pan together with any juices on the plate, add the mushrooms and pour the stock mixture over the beef and mushrooms. Sprinkle beef with salt and pepper. In an ovenproof Dutch oven, heat oil over medium heat; brown beef in batches. Place the flour on a plate or in a plastic bag with plenty of salt and black pepper and toss the meat in it until well coated. Add a splash of oil to a large casserole pan and place it over a medium heat.
