Kare Kare is a type of Filipino stew with a rich and thick peanut sauce. It is a popular dish in the Philippines served during special occasions. The traditional recipe is composed of ox tail. There are instances wherein both ox tripe and tail are used.

  1. Take 3 lbs oxtail (cut in 2 inch slices) you can also use tripe or beef slices
  2. Make ready 1 bundle sitaw or long beans
  3. Take 2 bundles bok choi / pechay
  4. Prepare 1 medium eggplant cut into 6 pieces
  5. Get 6 cloves garlic minced
  6. Get 1 medium onion, sliced
  7. Get 1 cup ground peanuts
  8. Prepare 1 cup peanut butter
  9. Prepare 1/2 cup shrimp paste
  10. Get 3 cups pork/beef broth
  11. Make ready 1/2 cup toasted ground rice
  12. Make ready 1 tsp achuete powder
  13. Take 1 tbsp fish sauce
  14. Make ready salt & pepper for taste

Kare-kare is a Philippine stew / curry complemented with a thick savory peanut sauce. Derived from the word Kare means curry, Kare-kare which translates curd and curry. It is made from a variation base of stewed oxtail, beef tripe, pork hocks, calves feet, pig's feet or trotters, various cuts of pork, beef stew meat, and occasionally offal or oxtripe. Kare-kare can also be made with seafood.

Instructions to make Kare-Kare:
  1. In a large pot boil ox tail until soft then set aside. Usually takes 2 hours. For faster result put in oven and bake for 10 minutes each side at 400 degrees before boiling
  2. In a wok, sauté garlic and onion
  3. Add pork & fish sauce and cook for a 5 minutes
  4. Add 2 1/2 cups of pork/beef broth, salt, achuete, ground peanuts and peanut butter and simmer for 5 minutes
  5. Add toasted ground rice and simmer for 5 minutes
  6. Add vegetables and cook until vegetables are tender. Stir occasionally.
  7. Season with salt and pepper to taste
  8. Serve with white steamed rice and bagoong (shrimp paste)
