  1. Rinse and soak beans over night
  2. Put beans in crock pot add enough water to cover beans about 3-4 inches. Cook on low 6-8 hours.
  3. Brown your meat' drain fat and add half the onion 1 jalapeño and the can of rotel. Add spices and simmer until onion and jalapeño is tender.
  4. Slowly add beans to meat add as much bean water as you like. I added it all!
  5. Stir together beans and meat add more spices & season to your liking. Simmer 10 to 20 minutes.
  6. Cook your white or brown rice to serve on top
  7. Chop the rest of the onion and jalapeño to serve on the side
  8. Other topping ideas shredded cheese' sour cream' cilantro, or avocado.
