Instructions to make Zacos:
- Drizzle your zucchini with a little olive oil, place on baking sheet and bake in 375°F oven for 15 min
- Meanwhile brown ground beef, drain fat, add your onion and garlic, cook until onion translucent then add seasonings. Add your can of black beans and 1/4 cup water and let simmer for 5 min
- Arrange your zucchini boats. You can either eat as is or place back in oven for 5 min just to melt cheese a bit.
