  2. Slice onion and add to the pot. Stirring periodically, cook the onion to a very light caramel.

  4. Add ground beef. Stir over medium heat until browned.
  5. Add canned tomatoes. Simmer gently for about 45 minutes, stirring occasionally.
  6. Drain and rinse kidney beans and add them to the pot. Simmer for about 15 minutes.
  7. Season with salt and pepper and serve, ideally with a big chunk of fresh cornbread.
